On a whimsical Monday afternoon, the minimalist in me was thinking, “How can I get cookies inside of my belly as fast as possible, with the least amount of work required, that still taste good and are relatively healthy for me so that I can eat 10 of them in one sitting?” Pinterest exploded into dust with that kind of a query. When I shortened it down, I found these healthy, dairy-free, refined sugar-free cookies that used only two ingredients!
2 Ingredient, Healthy Banana Oat Cookies
Makes: 10 cookies
Time to prepare: 5 min prep, 12 minutes baking
- 2 large over-ripe bananas
- 1 cup rolled oats
WHAT DO I DO?
- Preheat oven to 350 degrees.
- Mash bananas and mix in rolled oats. Drop spoonfuls of mix on a baking sheet, and bake for 12 minutes. Top with a chocolate chip, if desired.
